Jones has worked for the county since 1982 and served as sheriff from 2001 until his retirement in 2016.
"I feel very honored that the people would trust me in this position," Jones said. "I intend to do my best and keep things moving and be here for the people of the county."
A special election will be held to determine who will finish out the rest of Falcon's term as county judge, according to the county.
